A field blend wine is where all the different grape varieties in the wine are put into the fermentation vat together and fermented together from the start. Where as the more usual way of making a blend is to ferment ach grape type in its own vat and then blend these wines together afterwards. So why would you do a field blend when the results are less predictable? Well it’s cheaper as you only keep one vat in use rather than 4 or 5, plus it sounds cool and is a throwback to bygone times when wineries only had one vat. The resulting wine tastes of lemon, lime and oak with a cheesiness and vegetable water addition. Tastes more like many Italian whites made with their indigenous grape varieties.
