This sparkling wine from Limoux in the south France is made using the methode traditionnelle. Which is just another way of saying it’s made like Champagne and gets its sparkle from having some extra yeast added to the bottle. The flavours are similar too with apple and digestive biscuit dominating. There’s also a touch of lemon to help clean your teeth as you drink it too.
