The newer, blander, label makes this great stand-by dessert wine look horribly cheap and more like a version of British fortified wine that usually tastes less than great. But get past the outside of the bottle and inside you’ll find sweet flavours of fig and raisin. If you can’t finish up the bottle within a few weeks of opening you’ll find the flavours will oxidise and start to taste flat. So use up the excess in making the whisked custard dessert called Zabaglione made with sweetened egg yolks with a dash of Marsala. There is a dry, Secco, version of this wine that is hard to find and tastes a bit like Sherry – Quay Wines of Kingsbridge in Devon has it for £12.95.
